Since our inception in the early '80s the company has remained at the forefront of the special events industry by providing an incredibly diverse client base with exceptional food coupled with a unique focus on detail. Each client is an individual, and is treated with personal, hands on service at each and every step in the process, from the initial inquiry to the follow up after the event.
We have always been strongly influenced by California, from a perfect lunch at Chez Panisse in 1984, to more recent forays into Napa, Sonoma, and the coast from Mendocino to Big Sur. What has always been striking is the level of care that is put into the cuisine, be it a rustic roast of artichokes, carrots, fennel and just-caught halibut, or the sublime marriage of seared foie gras with juicy Bing cherries.
Our passion for pristine ingredients is the direct result of this California culture. It has fostered the development of a supplier network unusual in its range and depth. Sources of ingredients are cultivated to assure access to the people who grow and harvest the food, be it heirloom tomatoes, artisanal cheese, extraordinary, natural beef, pork, chicken and lamb, or fish that truly defines the word fresh.
Our passion for raw materials is what drives our menus. They are seasonal, utilizing only those ingredients at their peak. The menus are inspired not only by the ingredients available, but by a healthy respect for traditional technique tempered by the fusion of global cuisine. The Mediterranean explosion has been followed by a proliferation of influences including Latin, Pacific Rim, Caribbean, Cambodian and African. The diversity of American Regional Cuisine also provide daily inspiration, from the straightforward ocean centric foods of the Pacific Northwest, to the layered, nuanced heat of the Southwest, the subtle smoke of Tennessee to the bounty of New England’s harvest on land and sea.
We do not work from a menu package aiming to mold each client cookie-cutter fashion to a preconceived notion of what we want to serve. We design your menu to truly reflect your tastes and ideas, utilizing our expertise to marry your thoughts with each season’s bounty. Your personal vision combined with our imagination and knowledge of what we can successfully execute in each unique location will assure you that your menu truly reflects your style.
We are proud of our long affiliation with many charitable and corporate catering clients. Elegant dinners for 12, luncheons for 50, and receptions for 500 are completed on a daily basis in varied locations with minimal facilities. Private clients continue to rely on La Cuisine for occasions from christenings to weddings, for birthdays or any time there is a need for something truly special that reflects the client’s taste and vision.
